This week’s Supper Challenge theme is “Social Media inspired”. You know, the Tik Tok, Instagram or Facebook 1 minute videos full cooking and assembling a dish? Usually the videos show ooey gooey cheesy goodness or a cake baked and beautifully decorated. As usual, I took my own spin and had SmellaCutie 1.0 cook a spectacular breakfast, edit video and take pictures. <Yes, that means she did all of the work. I … held the camera and devoured her creation – to show I care.>

Banana Bread French Toast with Peanut Cream and Bacon Bits

Upgrade banana bread to a new level – warm, moist, balanced with peanut butter and bacon, this is one french toast breakfast all kids will be begging you to remake!
Course Breakfast, Brunch
Servings 6 people

Ingredients
  

Peanut Butter Cream

  • 3/4 cup whipping cream cold
  • 1/2 cup peanut butter smooth or chunky

French Toast

  • 1 loaf of Banana Bread (sliced into 3/4" slices)
  • 4 eggs
  • 1/2 cup milk whole
  • 1 tablespoon white sugar

Garnish

  • 1/3 cup crispy bacon bits
  • Maple Syrup
  • 2 tablespoons chopped peanuts

Instructions
 

Peanut Butter Cream

  • In a medium size bowl, whip cold whipping cream until soft peaks.
  • Add peanut butter and whip until fully combined. Set aside in fridge.

French Toast

  • Pre-warm frying pan
  • In a shallow dish, mix eggs, milk and sugar together.
  • Dip or dredge banana bread in egg mixture, flip and dredge other side of banana bread.
  • Place dredged banana bread onto hot frying pan until browned. Flip and brown other side of banana bread.
  • Serve with maple syrup, large dollop of peanut butter cream, crispy bacon bits and chopped peanuts.
