Its a much lighter meal when cauliflower rice fills your plate. Its not hard to skip the carbs and fill your rice with flavor instead. This is the perfect accompaniment to Cuban Mojo Shrimp, so if you want a full meal, this is it! In fact, this was the side to a “hot vacation” theme Supper Challenge. Yum!

Lime Cilantro Cauliflower Rice

A light, healthy and flavorful accompaniment to any meal, Lime Cilantro Cauliflower Rice will have you asking for more!

Equipment

  • Large frying pan

Ingredients
  

  • 1 head of cauliflower
  • 1 clove garlic minced
  • ½ red pepper diced
  • ½ teaspoon table salt
  • 1 tablespoon vegetable oil
  • 2 +2 teaspoons fresh lime juice
  • Zest of 1 lime
  • ¼ cup fresh cilantro minced

Instructions
 

  • Do not rinse or wash cauliflower or rice will be too wet. Cut cauliflower florets into large chunks.
  • In a food processor pulse half of the cauliflower until rice like. Pulse the remaining cauliflower into rice.
  • On medium heat in a medium sized frying pan, add vegetable oil.
  • When oil is shimmering, add garlic until browned about 2 minutes.
  • Add diced red pepper to garlic on frying pan for 2 minutes to start cooking.
  • Add riced cauliflower to frying pan. Add 2 teaspoons lime juice and salt. Stir.
  • Cover and cook for 5 – 8 minutes until cauliflower rice is tender. Remove from heat.
  • Add remaining 2 teaspoons lime juice. Stir in lime zest and cilantro.
  • Add salt and pepper to taste. Enjoy!
