Super enjoyed myself, @jsmella_smellaque, as a guest on @prairebbq Instagram LIVE event. I smoked tri-tip steak and Rob cooked a tri-tip like a brisket. What fun! Tri-tip is incredibly versatile, affordable and so delicious. <Yes, our family devoured the steak once the recording was done!>

Due to its triangular shape, this steak was popularized by the Santa Maria BBQ Festival that celebrates this bottom sirloin steak each year. Historically seasoned with salt, pepper and garlic, I added a few extra touches in my Kitchen Pantry Rub and finished off with chimichurri. Regardless of your seasoning, smoking a tri-tip steak is easy peasy.

Smoked Tri-Tip Steak

Smoked tri-tip steak is a versatile, affordable and flavorful steak that can be shared in your home – and without a trip to Santa Maria!

Equipment

  • Smoker/ Grill

Ingredients
  

  • 1 tri-tip
  • spice rub

Instructions
 

  • Season tri-tip 1 hour before
  • At 350F on a grill/smoker or 300F on Gateway Drum Smoker, cook 15 minutes on one side.
  • Flip and cook 15 minutes on the other side or until 15-20 degrees below doneness (mine was 110F)
  • Sear 5 minutes on lowest rack or hotter temp.
  • Flip and sear an additional 5 minutes. (Mine was done at 125F)
  • Rest 30 minutes under tented foil.
