Miso Chocolate Cauliflower

Every kid’s dream is to have all meals covered in chocolate sauce, but can it truly be tasty? Surprisingly, Miso Chocolate Cauliflower is THAT dish; savory and sweet, it’s a parent’s dream.

Ingredients
  

  • 1 head of cauliflower
  • 2 tablespoons vegetable oil
  • Kosher salt
  • 1-2 teaspoons chili powder

Miso Chocolate Sauce

  • 1 tablespoon butter
  • 1 ½ teaspoon white miso paste
  • 1 ½ teaspoon Better than Bouillon Chicken paste
  • 1/3 cup heavy cream
  • 1 full size Nestle Aero Chocolate Bar or 7 8g/ ¼ oz Halloween sized Nestle Aero Chocolate Bars or milk chocolate

Instructions
 

  • Warm up kettle grill, smoker, barbecue grill at 350 to 400F or oven at 400F.
  • Meanwhile, cut head of cauliflower into quarters, removing leaves.
  • On a baking sheet, drizzle cauliflower quarters with vegetable oil and generously season with kosher salt and chili powder.
  • Place cauliflower onto kettle grill, smoker, barbecue grill or place baking sheet of cauliflower into oven for 10 minutes. Turn or rotate cauliflower quarters once char develops in the area most exposed to heat.
  • Continue to turn and rotate cauliflower every 10 minutes until cauliflower is tender on the inside of the quarter and charred on the outside. Total cook time of cauliflower is 30-40 minutes. When removing cauliflower form heat, season again with kosher salt.

Miso Chocolate Sauce

  • Meanwhile, on low to medium heat, in a small pot, whisk butter, white miso paste and Better than Bouillon Chicken paste until smooth.
  • Whisk in heavy cream until miso cream mixture is simmering.
  • Turn off heat. Whisk in Aero chocolate bar until smooth.
  • Enjoy a generous helping of Miso Chocolate Sauce with charred cauliflower.
